The Hummus Story

The first mention of โ€œHummusโ€ can be found in historical texts going back to the Middle East in the 1200's. Many cultures have since claimed Hummus as their own, fueling a century old debate regarding the origin story of the star of our show.

The truth is, Hummus has been around for so long, all we really know is it came from the Middle East and each culture has put it's own spin on it. The only consistent ingredients are the chickpeas, tahini, lemon juice and water. Once those requirements are met, it's every man or woman for themselves.

Styles are noticeably different as you move from North to South. Beirut and Damascus have stronger hints of Lemon Juice and Garlic. Jerusalem and Gaza put more emphasis on their Olive Oil. In Amman and Cairo richer seedier flavors are emphasized, sometimes even adding some Fava beans to the mix.

The Hummussiah is here to bring forward the best aspects of each of these styles. As Toronto's Hummus experts we spent a lot of time sourcing the right ingredients and learning the secret processes to allow us to create the most authentic hummus in Toronto.
